Paddlefish or spoonbill (Polyodon spathula) produce a small to medium size roe with a delicate briny and mineral flavor and a silky texture. A North American relative of sturgeon native to the Mississippi River basin, it is known to be one of the largest river fishes in North America. Regalis suppliers catch paddlefish wild in Missouri and Tennessee. Technically their eggs are roe and not a caviar, because it is not a direct descendent of the sturgeon species.
