Kaluga hybrid is a sturgeon bred by crossing Acipenser schrencki with Huso dauricus, the latter being known as Amur Beluga and among the largest known freshwater fish. This species populates the Amur River between China and Russia. Sourced from a farm in China, this caviar has a very firm grain and is selected for its golden tone. Although lacking the complexity of its Osetra and Baerii counterparts, Kaluga provides a clean and rich tasting caviar for those applications when cost is of concern.
