The vibrant orange roe of steelhead (Oncorhynchus mykiss) has a medium size grain with a tiger's eye marking on each and a firm texture which pops when eaten.  It has a mild salmon-like flavor with a slightly sweet, briny finish on its own and takes on an added depth once it is smoked over applewood.
