Kaluga hybrid is a sturgeon bred by crossing Acipenser schrencki with Huso dauricus, the latter being known as Amur Beluga and among the largest known freshwater fish. This species populates the Amur River between China and Russia. Sourced from a farm in China, this caviar has a very firm grain and a deep green to black tone. Kaluga can take some heat without liquifying so it's wonderful in sauces. With a lower perception of salt on the palate, black kaluga works well in composed dishes such as nori wrapped tuna handrolls.
