Infrared ray is used to roast the seeds at a lower heat than conventional oils. This unique method cooks the seeds evenly without burning the shells, producing a smooth, nutty flavor without the bitter aftertaste. Though produced by the same method as the other toasted seed oils, the black sesame contains an extra level of complexity, which shows through in the darker hue of the oil and in the fuller nutty flavor.
