The Evergreen Blackberry cultivar was first introduced in North America from Europe in the 1700's. Highly sought after for its superior flavor and fast growth, it's small yield has deterred many from investing in it as a commercial crop. Partnering with foragers in Canada, Regalis produce this preserve with wild-harvested blackberries, organic cane sugar, lemon juice and pectin. Loosely gelled to allow the texture of the berries to stand out, this preserve brings a delicious tart and savory dimension when paired with sheep milk cheeses, buttered toast and pastries, tossed into salads, or topped on grilled steak.
